Sage, Salvia officinalis, is one of the most enduring herbs in both culinary and herbal tradition. Its Latin name comes from salvere, meaning to heal, which reflects a history of use spanning thousands of years across Mediterranean, European and Native American practice. It has been burned ceremonially, consumed medicinally, and used in cooking across more cultures and centuries than almost any other herb on this list.
